Panko Crusted Mustard-Glazed Chicken Breasts

Other than put mustard on my sandwiches, I can’t say I have much use for it.
I kind of just gloss it over when I’m ransacking my fridge for stuff to make dinner out of
& dismiss it as something “I kinda only like on sandwiches”.
I swear one bottle lasts me a year…& yes, that is still safe to eat.
Google said so.
It wasn’t until I ate at a restaurant out of town that I realized the awesomeness of mustard on chicken.
The chicken I ordered was lightly breaded & pan fried until slightly crunchy.
It was swimming in an intensely decadent fatty-fat-delicious mustard cream sauce & topped with what looked like melted butter.
So yeah, it was trouble.
But it was my cheat day so I told myself it was OK…
800+ calories later, it was so NOT OK.
But I don’t want you to miss out on having some mustard chicken goodness for yourself so I took all the flavor while cutting out some of the guilt to make this original 800 calorie dish into a new low fat 200 calorie meal!

Spicy Chicken Tortilla Soup

I wait all year for the weather to turn just the slightest bit of cold to bust out my soup pots.
Yes, I said pots…as in plural. What can I say? I love me some soup. My hands down absolute favorite kind??
Chicken Tortilla Soup!

I adore this stuff! I love the cheesy, thick, Americanized stew-like tortilla soup they sell at chain restaurants as well as the clear, spicy broth-like soup  you find at little Mexican restaurant hole-in-the-walls.
It’s actually one of the first things that I learned to “cook” in college.  My first encounter with this recipe came from an old home & garden magazine I was reading in my dentists’ office titled, “Five-Can Tortilla Soup”. 
I figured this was one recipe I could handle since  all I had in my cupboard at 21 was cans of food. I tore out the recipe from the magazine & hid it in my pocket thinking that the “dentist police” were for sure watching me & I would be banned from the office without getting my root canal. Guess what? Turns out no one gives a damn about a page of an old magazine when they are about to charge you $200+ to drill holes in your face. Lesson.  Learned. Still, I felt like a rebel & took my wrinkled recipe home with me feeling quite content that I got one over on that dental masochist.  I actually think I still have that recipe in a box somewhere… I keep it as proof to my children that their mom was once a bad ass ninja recipe thief. After I ended my crime spree, I started working on making what was an OK generic recipe into a delicious concoction of spices, chicken, fresh & canned veggies & fried tortillas. And so here is the fruit of my labor…no law breaking needed.

Sriracha Honey-Soy Chicken Wings

Maybe it’s the weather or
maybe it’s just the mean Fatty McFatterson streak I’ve been on since Thanksgiving,
but it seems all I can think about the last couple of weeks is chicken wings.

I think it started when I saw a commercial for a famous wing restaurant
& my inner “Chunk” sat up and did the truffle shuffle.

Uh huh,
I just referenced The Goonies.
That just happened.

So a couple of days ago, I bought some wings from the supermarket & then proceeded to stare at them blankly.
All I kept thinking was, “How do I make these pale little wings look awesome & delicious like the ones on t.v.?”
So I googled it.
Duh.
And my recipe for Sriracha Honey-Soy Chicken Wings was born!
The recipe is actually a result of mashing like, 3 different recipes together & using what I had on hand.
Making these at home not only saved me money but it also saved me from having to put on real pants & go out in public.
Double Win.

Besides, if you have never tried Sriracha before, what an awesome way to be introduced to this delicious red spicy sauce 🙂
Traditional Thai sriracha is usually sweeter, more tangy, & a thinner consistency than the “red-rooster-on-the-bottle” Huy Fong Foods brand sriracha I buy & LOVE
but either one will work with this recipe.

So….totally off topic…but you might be wondering what’s up with the grainy, off-colored photos?
Well, I got so excited that I was about to make wings that I didn’t charge my big fancy camera’s battery & therefore had to take these pictures with my good ol’ point-and-shoot.
You call it unprepared.
I call it retro.
Let’s agree to disagree, shall we?

So despite me trying telling myself that chicken is healthy, wings are not usually included in that category.  So in an effort to lie to myself a little more, I didn’t fry these wings before I put them into the oven.  Apparently, this is a terrible offense to some but I pinky swear that you really won’t notice the difference.  The sauce is so delicious, you won’t care about the missing fried chicken underneath.

To really clear my conscious of the tangy, sweet, awesomeness that I was about to consume,
I decided to lie to myself yet again & pair these delicious wings with a salad.

Hold on.
How did salad get in there??
Sneaky salad…hmph.

Now I’m not going to give you the recipe for the salad because if I did,
it would involve directions such as:

1. Go to the supermarket.
2. Buy a salad in a bag.
3. Open the salad in a bag.
4. Eat said salad in a bag.
5. Hang head in pre-manufactured shame.

Hey, sometimes a girl has things to do & side dishes aren’t one of them.

So don’t judge me & my bag salad.
